Salt, once so valuable it was used as currency, is a symbol of endurance, worth, and the flavor of life. Throughout history, salt has been a preservative, a spice, and a spiritual analogy—connected to eternity, purity, and integrity.
In the heart of Split, at the prestigious restaurant Zrno Soli, salt is not just a name – it is a foundational philosophy. Just as salt brings life to every dish, this restaurant permeates its surroundings with history, emotion, and modern culinary techniques. The restaurant’s owner, Ivo Vrdoljak, has created a space where each grain of salt tells its own story, merging centuries-old traditions with modern fusions.
– Salt is all around us; salt is life. It holds a special significance here, which is why we capitalize it. For centuries, it symbolized strength and endurance, precious enough to spark wars and shape civilizations. And while today it’s sometimes seen as a health threat, history and biblical wisdom reveal its true value: it preserves, conserves, and enriches. Here in our restaurant, salt is – Salt – begins Mr. Ivo Vrdoljak, the proud owner of this prestigious restaurant.

– With these words, each guest embarks on a journey—a journey reflecting centuries of history and Mediterranean culture. These words, prominently displayed on our menu header, warmly invites guests into a world where royal history meets contemporary culinary art – explains Ivo Vrdoljak, adding:
– Zrno Soli has become a gathering place for many notable guests, from royalty and world-famous stars to politicians, sports, and entertainment icons, as well as all the gourmets who may only be icons within their own families but are just as important to us.



The restaurant’s guest list includes the Danish queen, a Thai princess, members of the band Guns N’ Roses, the UEFA president, numerous prime ministers and presidents, entertainment stars, and even American actress Ashley Judd, who chose the restaurant as a perfect location for scenes from the popular TV series Berlin Station. Among them, they proudly highlight a local Split star, Olympic judo champion Barbara Matić, who they proudly say is an ambassador of the restaurant.
But what makes Zrno Soli truly special is not only its list of famous names but also the trust and friendships that develop over time. Every visitor, whether it’s their first or tenth time, is welcomed with the same warmth and attention.
– When a guest leaves satisfied, we know we did something right. At the end of the day, it doesn’t matter if you have a Michelin star; what matters is providing each guest with an unforgettable experience. Located on the first floor of Split’s ACI Marina, Zrno Soli offers something unique in Croatia—a “million-dollar view” of a 1,700-year-old city. Each moment spent on its terrace is a unique blend of past and present, where under the warm Dalmatian sun, views of the magnificent Diocletian’s Palace intertwine with the bustling sea traffic and the elegance of Split’s port.

Since 2018, when Michelin entered Split-Dalmatia County, Zrno Soli has been proudly listed in the Michelin Guide, holding the prestigious Michelin Gold Plaque for 2023—a testament to the creativity and consistency in providing a top-notch culinary experience.

While the view and ambiance set the scene, the real star of Zrno Soli is its kitchen. Based on fresh, local ingredients, the daily offering of fish, lobster, shrimp, and seafood is rooted in Dalmatian tradition, but with elements of contemporary fine dining. Zrno Soli brings old recipes to life, from brudet with stone-ground polenta to premium-quality meats like wagyu beef, black pork, and organic chicken.
The premium seven-course tasting menu delivers an authentic Mediterranean story in a modern way, and when paired with views of the sea and city lights, each meal becomes a unique experience. For those who prefer vegan options, Zrno Soli offers a small but carefully crafted vegan menu that celebrates the freshness and seasonality of ingredients.


– Our dedication to excellence in food is also reflected in our innovative recipes. One example is the Pasta Non Plus Ultra, which is so flavorful it can impress even the most demanding guest. This dish, a creation by chef Branimir Prnjak, stands out not only for its superb preparation but also for its commitment to the “zero waste” concept, respecting the environment – reveals Ivo, continuing:
– We are especially proud that in May 2024, the co-owner and chef of the world’s best restaurant, Spain’s Disfrutar (formerly chef of the famed El Bulli), praised our chef Marko Đurašević. Marko was also named Chef of the Year 2024 by the prestigious Gault & Millau culinary guide.
Beyond preserving the national culinary heritage, they also carefully explore flavors of the past. In 2025, Croatia will commemorate the 1,100th anniversary of the coronation of King Tomislav, and Zrno Soli will celebrate with a special seven-course menu inspired by the year 925. This unique menu will revive the treasures of Croatian cuisine, paired with Kaštelanski Crljenak Putalj, a limited edition wine that will accompany the entire menu—just as it would have a thousand years ago, Vrdoljak says with pride.
Vrdoljak, who also serves as the president of the Croatian branch of the British Croatian Business Club (BCBC), has worked tirelessly over the years to promote Croatia as a world-class gastronomic destination. In late November 2023, Zrno Soli, represented by Ivo Vrdoljak along with chefs Branimir Prnjak and Marko Đurašević, achieved historic success at a prestigious international event in the United Kingdom. As guests of one of the world’s most famous chefs, Raymond Blanc, at his Le Manoir aux Quat’Saisons manor in Oxfordshire, they showcased Croatian gastronomy, connecting the Mediterranean and Croatia with the world’s highest culinary standards.
Through their culinary creations, Branimir Prnjak and Marko Đurašević brought a taste of the Adriatic to the heart of England, impressing all in attendance. Blanc’s team couldn’t resist the charm and passion of the Croatian chefs…
Vrdoljak’s role in this historic encounter, supported by BCBC president Paul Jenca (a man with a big heart, as Ivo describes him), not only promoted Croatia in the UK but also demonstrated how top-tier gastronomy can unite people and cultures.
– To be part of such a prestigious event, working with Raymond Blanc and his team, was a dream come true for us. Blanc is an inspiration to all of us. His dedication to detail and respect for tradition are truly remarkable. Learning from him, sharing ideas, and stories about food was an experience that connected us even more – said Vrdoljak.
This collaboration with Blanc further cemented the position of this Split restaurant, as well as Croatia, on the global culinary map. Blanc, known for his two Michelin stars, plans to reciprocate the visit to Croatia. His arrival will mark a new step in strengthening the partnership between the two countries, and Zrno Soli will host one of the most important culinary events of the year.



– This is not just our success; this is a success for all of Croatia. Through collaboration with Blanc and BCBC, we’ve shown the world that our gastronomy can stand shoulder to shoulder with the best – concludes Vrdoljak.
Zrno Soli and BCBC continue their mission: to promote Croatia as a premium gastronomic destination, with each collaboration opening doors to new and even more exciting projects.
– In June 2024, we had the honor of preparing a formal lunch in the private chambers of Windsor Castle, while representing Croatia at the Olympic Games in Paris. Our story abroad doesn’t end here: in 2025, we planned a special event in Jerusalem, though this will have to be postponed until circumstances stabilize. But surely another opportunity will arise, where we’ll once again shine on the global culinary scene – says Ivo Vrdoljak.
He explains that they are not only striving to satisfy appetites…
– We aim to awaken emotion, connecting guests with nature, the region, and history in every bite. Mediterranean cuisine is love and a way of life that embraces the philosophy of ‘pomalo’ (taking it easy). At its core, the Mediterranean diet celebrates simplicity and freshness, relying on nature’s best. Intense aromas, rich colors, and a diversity of flavors define each bite, while heritage transcends the kitchen, diving deep into the culture and history of Dalmatia. It’s no coincidence that UNESCO has recognized the value of the Mediterranean diet—it’s a natural gift of this region that nourishes not just the body, but also the soul. The Mediterranean diet uses the best of nature, emphasizing plant-based oils, fresh ingredients, and harmony of flavors – explains Vrdoljak.
A key part of this philosophy is the exclusive use of premium extra virgin olive oil, which holds special significance here. This liquid gold, as it’s often called, is not just an addition to dishes—it’s the heart of every recipe. Olive oil here bears the mark of authenticity and quality. Its rich taste and golden sheen, combined with flower of salt—the finest layer of sea salt—elevate the dining experience to a new level, highlighting the authenticity of each plate.
While Mediterranean cuisine can vary from region to region, the fundamental characteristics remain the same: simplicity in preparation, focus on fresh, local ingredients, and natural flavors. In this restaurant, that philosophy lives through innovative interpretations of classic recipes. Every dish tells a story of the past, of the sun, the sea, olives…
An essential part of the Mediterranean experience is also found in the carefully crafted wine list, offering guests an authentic experience of pairing local wine varieties with the rich flavors of traditional dishes. Each meal is paired with wine that perfectly complements the plate—from the native Kaštelanski Crljenak Putalj, which proudly carries the title of one of the most important wines in Dalmatian history, to other local varieties that create a symphony of flavors.

– Wine and food are like music and dance. One cannot create a perfect impression without the other. Here, the pairing of dishes and wines is no accident—every drop, every bite is carefully selected to create a harmony of flavors – he emphasizes.
Each glass of wine served carries the story of Dalmatia—of sun, vineyards, and tradition that spans centuries. Ivo and his team take pride in offering guests the best native varieties, creating an experience that is much more than an ordinary meal.

So says Ivo as he raises a glass of wine that brings together the Mediterranean, love, and passion for gastronomy, adding:
– And when the last light on the terrace goes out, what remains is a memory—that special feeling that will stay with you long after you leave Split. That special emotion is our mission.
As a young boy, Ivo dreamed of two great dreams: to become the president of Hajduk football club and to create his own prestigious restaurant. The first dream did not materialize, but the second has not only been achieved but has exceeded the most ambitious expectations.
– The moment Zrno Soli became the official restaurant of Hajduk, two of my childhood passions merged, crowning all my dreams – says Ivo.
Growing up in Split, fascinated by the world of high-end hospitality, Ivo followed his father to the best Dalmatian restaurants. Those early lessons on hospitality, a passion for food, and attention to every detail were the foundation of the vision he has poured into Zrno Soli over the years.
– From the very beginning, I was guided by the motto ‘to please and to host,’ convinced that this is the key to success. A person who wants to learn will do so every day. Everything has already been invented; one just needs to observe the best examples and add what is most important—a genuine part of oneself – says Vrdoljak.
For him, the future of Croatian gastronomy lies in quality, authenticity, and local stories.
– Croatia needs carefully curated experiences that showcase the richness of our culture and tradition, not mass tourism. Croatia is a paradise on earth, and it must be a special magnet for the so-called ‘4-5 star guests.’ But we must also be a country destination with ‘a million authentic bistros, taverns, and inns.
In addition, Ivo greatly values and respects his staff, believing only in teamwork. He always emphasizes that no one can better present what Croatia has to offer than local people, those who feel and understand the essence of Mediterranean culture and its values.
– No ingredient, no plate can tell a story unless there’s a team behind it that understands that story – says Ivo, convinced that only with joint efforts can they create experiences that leave a mark in the hearts of guests. To him, chefs, waiters, and all team members are much more than employees; they are the soul of the restaurant, guardians of stories that make each bite a unique tribute to the Mediterranean.
He often highlights that the strength of the team lies in the combination of everything they have in one place—from youthful creativity that brings freshness to the wisdom of experience that provides stability and prudence.

In a time when the hospitality industry increasingly feels the pressure of labor shortages, Zrno Soli manages to retain the privilege of selecting staff according to its own criteria. When someone comes to apply, the first step is a classic interview, but the second or third step must be a shared lunch or dinner. Each person brings something unique, which is why Ivo insists on a personal approach.
– I want to get a feel for that person, to know who they are, how they think, how they live and breathe. That shared meal helps me understand if that person can fit into our family and become part of our Zrno Soli story. And, of course, it also allows them to get to know us better.
Zrno Soli is synonymous with top-notch gastronomy, recognized and respected across the region and beyond Croatia’s borders.
– The dream doesn’t end when it’s achieved; the dream continues, evolves, and grows. Each day is an opportunity for something new, for creating even greater value. That’s a vision that’s being built – our interlocutor concludes.
